According to information from the Department of Education and Training of Ho Chi Minh City, the city currently manages 1,834 educational institutions with communal kitchens and 487 schools using industrial meal services from external providers.
This not only reflects the diversity in providing meals for students, but also highlights the challenges related to ensuring food safety in the educational environment.
A leader from the Department of Education and Training remarked that although communal kitchens are considered an ideal choice, not all schools have the capacity to implement this model due to limitations in space and human resources.
As a result, many schools have to opt for industrial meal solutions. In the midst of the proliferation of industrial meal services, this poses a significant challenge in controlling food quality and safety.
The Department of Education and Training has urged educational institutions to enhance their responsibility in controlling food quality and origin, ensuring compliance with regulations on food safety and hygiene.
The on-campus kitchen facilitates make it easy to monitor and control meal quality. However, opting for industrial meals from external suppliers poses significant management challenges, especially when regular inspections become difficult.
Thu Duc City, with a large student population and numerous schools, especially focuses on food safety supervision. Measures such as encouraging teachers and staff to eat with students are implemented to enhance meal quality control and ensure student safety.
The pressure to ensure safe meals for students is a significant concern for principals. Measures applied include establishing strict procedures from ingredient reception to food processing and distribution, minimizing risks related to food safety and hygiene.
Tan Tao Middle School (Binh Tan District, Ho Chi Minh City) is exemplary in controlling meal quality for boarding students. With over 1,500 meals served daily, the school collaborates with reputable industrial kitchens, ensuring close proximity to keep the food hot when reaching students' hands.
In addition to tight contract agreements, the school regularly checks menus, supervises the cooking process, and organizes staff to eat with students to ensure food safety and hygiene.
Ms. Nguyen Thi Hong Chau, principal of Tan Tao Middle School, shares: "Industrial kitchens have many advantages such as fully equipped facilities, ensuring processing procedures, food supply sources, and thorough inspections. However, the school still needs to control closely to ensure the best quality for students' meals."
With work pressures, many parents choose school nursery for their children. Ms. Mai Hanh, a parent with three children studying in District 1 and District 3, said: "Nowadays, parents work all day from morning to evening, so the demand for school nursery is very high. Therefore, when choosing a school, I prioritize those with inner kitchens to ensure quality."
Ms. Hanh has participated in inspecting boarding and industrial kitchens and tasted meals with her children. She noticed: "Meals cooked on-site at the school are often tastier and of better quality than industrial meals, although the prices are equivalent. I have provided feedback to the industrial meal providers regarding the use of fresh ingredients instead of processed foods like sausages and smoked meats."
